The Real Tomato Pie

As described in The Slice website, the Trenton tomato pie is “built as follows: dough, cheese, toppings, and then sauce.” In other words, backwards. But I don’t remember the pies I ate back then being built that way. Actually, I didn’t even like tomato pies. Maybe that was why?
I also remember them as being extremely greasy.

I actually didn’t like tomato pie when I was younger. I started eating it when I came to Hawaii in 1967. Then when I went back to Trenton, I really started getting into them. Yes, they are greasy. That’s one of the best parts! Brother’s Pizza is always on the list of things to do when I go back there.

Maybe I didn’t like them because it seemed they were always cold. The delivery trucks didn’t have those envelope bags for keeping pizzas warm back then. They actually had heating units on the truck, but I don’t think they worked too well, especially in winter.

In Trenton on Monday I had a slice of pizza at perennial Brothers Pizza — very good and like I remembered, and the cheese was on top. Strangely all the workers there seemed to be Mexican or Guatemalan.
